I've always longed for a 1000 star Serrissa, and I finally had a friend who was doing some light pruning, and gave me a little stem to work with.
I took a cutting several weeks ago from a very tiny serrissa, the stem I got was about a 1" with 2-3 tiny leaves. I planted it in a plastic seedling tray and now that little sucker is massive! It's about 7" high, has numerous fresh, green, healthy leaves, and is getting too tall for my humidity dome.
What do i do now?
Should I pinch back some of the leaves? (the tops ones are much larger then the bottom ones. Also, it's getting pretty heavy for it's little stalk, and leaning heavily to one side. it has a natural Y shape with one side much more dominant, should I trim that off (maybe plant that out as a second tree?)
Advice? I've never done a cutting and didn't expect such rapid growth.

The rapid growth will eventually slow. This is the most prolific time of the year for new growth and serissas can certainly put it out.
When the roots of the cutting are well developed, you can transplant the cutting into indivitual pots with a lot of room to grow. Keep teh well watered all the time and give then very good light.
